Annette Whittley founder of ASB hospitality has over 20  years of luxury service experiences.  After graduating from the University of Surrey with a BSc. in Hotel & Catering Management she joined luxury hotel industry leaders Four Seasons hotels and resorts.  Over 13 years with Four Seasons she worked in restaurants, bars, recreation facilities, banquets, in room dining, and was involved in multiple renovations and openings.  Her time with Four Seasons included city hotel and remote resort locations.

In 2015 she made the transition to private clubs, joining the executive team at Congressional Country Club  the highest rated Country Club in the United States and globally (source: Platinum Clubs of the World). Host of five major golf championships and future host of eight major PGA championships including the Ryder Cup.  

Her passion for the industry lead her to start ASB Hospitality in 2019.  Annette is passionate about building a strong a foundation for the teams she works with.  She believes in lifelong learning and specializes in building leadership and service teams product knowledge, service skills and the development of great systems. When the basic fundamentals are in place hospitality magic can happen and life long memories made!

 

Annette understands that each business is unique and therefore customizes each of her services and trainings to your companies culture and traditions.

Annette is a world traveller with six continents under her belt, and expeditions to Mt. Everest and Mt. Kilimanjaro.  She is an avid marathon runner, always training for her next race!  When she is not on an adventure she enjoys finding new restaurants and drinking wine in her local neighborhood with friends.

Training & Development Programs

We provide an extensive range of trainings for line level & leadership team members. 

We specialize in training service and leadership teams on food and beverage fundamentals.  Additionally we have classes focused on the magic of hospitality and unscripted acts of kindness that differentiate you from your competitors and create memories.

Our leadership classes cover a range of topics from what it means to be a leader "on the floor" to communication, change management and implementation. 

Our presentations can be adapted in length & detail to suit the needs/goals of your unique organization.  Typical programs range from 3 - 5 days.

Training Lessons– Designed for FOH or BOH line level teams (but we highly encourage all F&B leaders attend) these lessons teach the fundamentals of the F&B industry.  


F&B 101 - Service basics that no one teaches but everyone expects you to know.  We will cover basic behavior expected on the restaurant floor.  Expectations for professional guest interactions and attitude skills for luxury service environments. 

Food 101- We review product knowledge and product identification using ingredients from your menus.  We will learn cooking methods and how this affects all aspects of food, describing food and learn words that add value.  Lastly, we wrap up covering Allergies, the seven main types and allergy vs. dietary restrictions, procedure for specifics, severity and communication.  This class equips attendees with the confidence to accurately describe food and add value to the guest experience.

Wine 101 -We cover wine basics, how to taste, describe & sell wine

Food and Beverage Pairings - This class covers the basics of complimentary and contrasting pairings.  We take items from your existing menus and explore pairings including alcoholic (wine, beer etc.)  and non-alcoholic beverages (coffee, tea, juice, lemonade etc.).  This class equips attendees with the ability and confidence to describe, pair and sell food and beverage with more confidence and allows them to customize guest dining experiences. 

In Room Dining 101- We walk through steps of service and the key moments within these.  We review the unique challenges and opportunities that in room dining presents to allow for memorable service in a luxury food and beverage environment.

Spiel and making recommendations - We will review, what is a spiel?  When do we give a spiel?  And how to create a great spiel from the ground up.  We review and practice spiels for menu/concept/buffets, daily, weekly and monthly specials, signature items and how to make recommendations.  This class is half activity based where attendees will be given a range of variables/scenarios to practice and customize while receiving feedback from their team members.

Sequence of Service 101 - The road map to guest/member experiences. We cover the do’s and do nots of each step.

How to bus a table- There are over 35 points to consider when properly clearing a table!  Tray jacks are dated, and this session teaches teams how to effectively clear a table in an unobtrusive, effective way.  All attendees will practice these new skills.


The F&B team player - This class is focused on what it means to be a cohesive team player in a luxury food and beverage service environment. The attendees learn about positives and negatives with regards to change.  Habits, and self-awareness of their own good and bad habits.  We review creating a culture of accountability, giving and receiving feedback and fostering a culture of excellence.  The class activity highlights characteristics of positive and negative work habits and presents operational scenarios in which attendees have to address problems and find ways in which to problem solve. 


Genuine acts of kindness and recognition - This class teaches teams to recognize how to “connect the dots” and create special hospitality moments within food and beverage.  This session is focused on the components of recognition. Key moments in the guest experience. We cover recognition and the tools available to us for recognition.  Thinking about and observing our guests, then the action of caring and compassion.  The difference between expected levels of service and exceptional service.  We role play through scenarios of bad and exceptional service.
